Last summer I tried several sit on tops from hop-on-top (a brandname that 
may now be Heritage kayaks).  They had several models with thigh straps.  The
thigh straps worked great.  I didn't try, but I'm pretty sure I could
have rolled their sit on tops.  I was able to put the boat up on edge
and carve some nice turns. 

I've got a sit on top (surf ski) that I use during the summer.  It's a bit 
too wet of a ride for year round use, in this area.  We timed my brother
last year for tipping over and getting back onto the surf ski, it took
him 7 seconds to flip over, climb back on and start paddling again.

As for water up the nose, nose plugs are worth every penny for rolling
practice....
