[Paddlewise] Knives -- revisited

I read the various posts here on this subject and came away with the
belief that the best kayak knife is one with a single serrated edge and
a blunt tip.  This being the case, why not just buy a $2 Farberware
stainless steak knife with a plastic handle and round the point?  All
you'd need in addition is an inexpensive sheath to attach to your PFD.
I tried one of mine and it cut 1/2" nylon line like butter.
