If you like to take advantage of the wind, check out the Easy Rider
Eskimo kayaks.  Besides being very stable (wide)for sailing and fishing,
the deck in front of the cockpit is re-inforced to handle a step for the
take-apart-mast/spinnaker pole you always keep ready under the gunnels.  
While the rudder works fine for +/- 30 degrees off your desired course,
their newer hulls have, in front of the cockpit, built in supports for a
19 inch long, 1.5 inch diameter fiberglass rod to which you attach a lee
board for further reaching or use with your parafoil.  

For me it's a relaxing break from paddling on long trips that still
moves you along the coast to get to the next all-important fishing spot
for more time catch the evening dinner.  I also carry two 6 inch rubber
bumpers and two bungies in case I need to attach a less exotically
equipped friend.
