I'm in Barbados in the Caribbean and I have several sit-on-tops. My 'thing' is rough water paddling. The best I've paddled in rough water is the Pyranha Surf-Jet 305. It has a retractable skeg and surfs waves quite good. The Prijon Twister is a good surfing sit-on-top. The others I paddled: Wilderness Systens Two-Can, Ride & Riot are OK but not for surfing. The Necky Spike and Dorado if fitted with a rudder surfs reasonably well and are comfy and stable for short touring. Of course no long boat, (sit-on-top or decked) because of the physics, can be a high-performance surfing boat. I've little experience with the Ocean Kayaks, there are only a few of them around here. If you get a boat over 12' long its not going to surf waves very well but it would probably track and hold a straight course better than a (say) 9' boat, which will not be as comfortable but will be able to surf waves.
