Bone edging on the paddle blades held in place with bone nails?
Bone end protectors over a tenon on the end of the blade?

On a realistic note, spend a lot of time making the transition
from the blade to the shaft comfortable, that's where my hands
spend 90% of the time when paddling. Also find some light weight
wood. Several of the woods you mentioned are nice and sturdy but
will yield a fairly heavy paddle.
