Finally i can give up my quest to get rid of those little eddies near my
paddle.. they been driving me to distraction!

i have seen wing paddles that are spoon shaped, with a hook on the top
edge...
does that profile help maintain a laminar flow around the paddle and thus
reduce eddy production?

The curled over edge is to help make an foil shape of the blade. Originally
they tried solid paddles of the desired shape, but they were too heavy.
They found they could get the same effect buy make the shape you have seen.
The space behind the curl is filled with water and this creates a "solid"
foil.
