I used to sail an double seater Pouch before I bought my hardshell kayak.  My sail
was made of cheap plastic cover and a pair of carbonfibre telescopic fishing rods,
with wooden plug in the ends. The result was a V-shaped sail with two moving booms,
and I could raise and lower it in just few seconds. The longer boom was attached to
my paddle blade by a 1-metre line. When sailing I kept the paddle quite horizontal
on the weather side of the wind, it acted like a kind of "proa" rig.  The other
boom line was attached to the cockpit side.

It allowed sailing some 70 degrees aside from the wind direction, which for most
cases was quite enough for me. When camping, the sail could also be used as a
rainwater collector. One thing I learned sailing it that in steep waves water from
the front wave tends to climb ontu the front deck. This can be avoided by
zigzagging the downwind course - gybing was possible too.
