Where do you carry your pee bottle on a SOT?  What do you do with your
paddle when you are holding the bottle in one hand, and that other thing in
the other hand?  Could be embarrassing in mixed company.

Well, that certainly would be a detriment.  BUT, since it is so easy to
hop on and off an SOT as opposed to being in a SINK (a Sit-INside-Kayak,
that's what I understand SOT elite paddlers call a closed kayak), you
can discretely take care of such needs in the water.

    On the NJ shore you're likely to see a SOT alongside every LifeGuard
Chair.  I asked once, and the LG said it was easier to grab someone and haul
him aboard with that kind of boat.  Easier to get through the surfline too.

The manufacturers of mine have provided these wonderful lil "pee holes" in the
bottom. Just pick the one appropriately located for your personal physical
dimensions, and voila, instant relief.. 

As an added benefit, you can check the water depth at the same time ;-)

Well, that certainly would be a detriment.  BUT, since it is so easy to
hop on and off an SOT as opposed to being in a SINK (a Sit-INside-Kayak,
that's what I understand SOT elite paddlers call a closed kayak), you
can discretely take care of such needs in the water.

I have to confess that I was looking at this situation in the wrong way
and I should have applied Occham's Razor.  Instead of getting into
complicated solutions such as hopping off to pee, which some individuals
would complicate even more by still insisting on using a bottle in the
water (I assume in order not to pollute the environment and take the
discharge back to a proper dumping station), the answer is simple. 
Consider the whole SOT as one large pee bottle!  Most SINK paddlers do
anyway. :-) The SOT has scuppers in various welled indents in the boat. 
Relieve yourself into one of the wells; water sloshing inside the well
will act pretty much like a flush toilet.  If in mixed company or near a
dock where you can be observed, hold a dry bag in front of you
pretending you are looking for something.  Restrain from too broad a
smile of relief when finished as that would tip others off as to what
you really were doing.

Somehow, I'm picturing this guy floating on his back trying
to accomplish the task at hand like some sort of sea lion
cracking open a shell on his belly. (attempt at humor).

If the Coast Guard sees this, having an approved PFD is
not going to be your biggest problem.  (Additional really
funny humor attempt)

Leave the bottle secured under a deck bungie since if you
open it under water it's going to fill up anyway and you won't 
be the filler, hop off the boat, have the paddle in one hand 
and the boat in the other and let 'er rip.  Happens in the 
pool all the time.

I suspect this is the method Ralph was suggesting.

Not sure how Ralph does it but I hold the bottle filler with my left hand
and the boat with my right hand. The paddle is attached to the boat with
its tether. I activate the VHF with my teeth while checking my position on
the GPS with my little toe. I use natural flares that I light with my BIC
as they surface. (be careful not to fire them up wind or they drift back
down on you. Also be careful not to fire to aggressively.)

If I make a mistake I wipe myself with the spray skirt I don't need. I use
the biodegradable kind. Be sure to zip up before you re-enter the boat. You
could get your bottle filler caught in a deck bungee.
