FWIW, I don't have a strip kayak but I have used Epiphanes (spelling?) varnish on a bunch of marine brightwork as well as my garage doors. It seems to hold up well to the sun and salt and outlived a couple of poly finishes I tried. I have no idea about epoxy compatibility. The gloss finish is very glossy but they have a semi-flat too. They suggest you build up the base coats with full gloss then switch to the flat for the finish coats. This should add to the durability. I bought it at boatUS and it was fairly pricy ~$20/quart plus you should get thinner for the first couple of coats.
