As an alternative a rudder system that uses fixed foot braces
rather then ones that slide works well. Prijon uses this type
of rudder. The foot pegs are fixed in place and use a "gas pedal"
type lever on each peg to control the rudder.

I personally don't care for rudders and prefer a skeg or nothing
  at all.
