What a brilliant design! Was this a custom option? Do Nordkapps or any
other boats offer this as a standard or optional feature?

This sounds like the standard New Zealand seat for Nordkapps and other
kayaks by Sisson Kayaks. Been building them like that for over a decade.
Quality Kayaks are also now doing a similar seat on some of their glass
boats as is John Dobbe on his singles and doubles though he seems to blank
off the access to the side panels.
