My question is WHAT DO OLYMPIC PADDLERS ACTUALLY DO?
Sub-question: If they do it the same way I do it how did the
ACA/BCUer's get it so wrong?

It was Derek Hutchinson who taught me to use my feet when paddling,
and I think he said to push with the foot on the side on which you
are stroking; anyway, that's the way I've done it ever since.

ACA and BCU certification only means that the instructor has passed
the instructor exam; it doesn't necessarily mean that he or she teaches
ACA or BCU technique afterward, especially if the instructor disagrees
with it; for instance, I know instructors who teach with unfeathered
paddles, even though the ACA and BCU insist on feathered paddles,
because they feel that their students learn faster that way.
