The people who build poly kayaks for Old Town make one that converts (more
or less) their whitewater kayaks to flatwater use. It slips over the stern
and holds on with bungee cord.

If that sounds like what you want I will se what I can find out. Most of the
kayak shops around here seem to have these things.
