We have something here called "Wobbly Chicken" , or "Drunk Chicken" as
some call it.  You'll see the reason later.

The method involves coffee can cooking and can be adapted to cook lots of
things.  The basic stove is an empty 2 pound coffee can with about 6
punched air-holes around the side at bottom edge and with an open top. 
Layer the bottom of the can with charcoal   ...you'll have to experiment
with how many briquets to match up with what you're cooking.  For the
chicken here, stack in briquets on edge and make a full single layer.  
Fire up the charcoal and go work on the chicken.

Wash and pat the bird dry and then season liberally outside and inside
with any seasoning rub you like ...it's good with just lemon-pepper or
you can use whatever flavoring is your favorite.  Now comes the fun part.
 Open and drink about 1/2 of a can of your favorite beer ... drink 1/2
and no more.   Add a teaspoon of the spice rub you're using to the 1/2
can of beer remaining.   Now figure a way to delicately insert the 1/2
full can of beer with spices up inside the body cavity of the bird. 
Literally speaking here,  you shove a beer can up a chicken's arse !

Now wrap this whole thing in a double layer of "heavy" duty foil so that
the chicken stands upright with beer can intact inside.  Make sure the
foil forms a "leak-proof"  bottom and has a loosely crimped mostly open
top.  If the coals have burned down, put your gloves on and slide the
foil package down into the coffee can and lightly touching the coals at
the bottom.   Pour a little beer over the bird inside the foil to get
things started.  You can fashion a loose fitting cap-lid out of more foil
if you like.  The coals will work on that  spiced beer and make you one
fine chicken for supper.  The hip and leg joints will be thoroughly
cooked and floppy ...therefore the name "Wobbly Chicken"  !
