Another way to achieve this would be to rig a small sail at either end
of your boat.  These could be fan shaped sails with battens, just like
the dorsal fin of a sailfish, and could be raised and lowered by lines
through jam or cam cleats. The clean way to do this would be to have an
adjustable (and retractable) wind fin at each end of the deck.  Such
fins would need to be easily retractable or they might interfere with
rolling, although if the fins were bouyant, and not too large, they
might aid a roll.

Of course now you have all the complication and added drag of two
skegs.  A boat which has neutral helm when under way is what you really
want.
