Gabriel, The Human Powered Vehicle people have been building watercraft for years trying to figure that out. The record holder of HPVs last I heard used an air propeller and was foil borne. (19+ MPH?) Certainly not practical for touring. There are comercially available pedal water propeller units that can be hung off the side of a kayak but you still need the knee clearance such as in a SOT.
