G'Day, It can be quite hot paddling in NSW Australia. Don't know if the conditions are similar to Sea of Cortez. Following may be helpful. Take plenty of water, 5L per day per person - drink it frequently to avoid headaches. A kind of legionnaires hat is becoming very popular here. It has back and side flaps to protect the neck from the sun. Use waterproof suntan lotion. Clothes do get salt encrusted but it doesn't seem to matter.
