Perhaps he should check out a seat for a decked canoe.  The kneeling position should get his hips in the near 80 degree range without the extra height needed with the legs extended.  I don't know if there
are any sea kayak manufacturers that offer a canoe seat option, but there are a number of whitewater manufacturers that do.
