In May, we camped at Fundy National Park and did day paddles with Fresh Air Adventure in Alma. We particularly liked the paddle going south (to Point Wolfe). If you are game, they will take you climbing up to a waterfall, inaccessible from the land. The Bay is sure to have warmed up (from the 41 degrees Fahrenheit in May), possibly all the way to 45. I would suggest at least a neoprene short john, even though the locals seem to think that even 41 is pretty warm and requires no protection (!!!). I would not recommend doing it alone, unless you are very experienced. It is easy to become marooned between a cliff and suddenly rough seas, with your little lunch beach disappearing rapidly as the tide comes in.
