It is generally known that foldables with air-sponsons are very difficult to roll. On the other hand, they don't turn over in rough seas easily. But some people have done it. See: Dave rolls a Klepper http://www.vsb.cape.com/~mccue/docs/klepper.html In the July/August number of Kanu Magazin (in German) there was a photo of a Feathercraft Klondike (a double!) being rolled. With air-sponsons deflated, they indicated. But these are rare, exceptional performances.
