I'm pretty sure the inflatable PFDs I referred to in my original post would prevent a capsize if you pulled the rip cord fast enough, or float your head above the water if you already had capsized. They have about 35-38 lbs of positive buoyancy. I don't think it would be possible to keep your upper body submerged with one of these on, even if your lower body was still in your boat.
