The good news is that the winds (El Norte) begin to diminish about
March/April.
The water is colder then, and a wetsuit is needed for diving/snorkeling.
You could  fly into Loreto or LaPaz, rent kayaks etc, or drive down to
Bahia de Los Angeles from San Diego (12hrs)and perhaps do a loop between
Animas Bay and LA Bay. 

Things do not happen all that fast in Mexico.  You haven't said where
you live? Aside from travel times, a day might be spent waiting for
winds to drop, etc. You might feel rushed, IMHO & experience. If the
problem is your job and vacation time, consider this approach:  Call in
WELL*!  I did this  in the 1970s.

I think it takes two weeks to a month+ to really get into the flow of
paddling in Baja.  This much time will allow you to set up for a longer
trip down the coast, get comfortable with the environment, people, food
etc.
