I have one from Superior Kayaks that is just Gore-Tex (no insulation).  SK asks
you for a number of body and kayak measurements and then stitches it to fit you
and your boat.  It permits free movement yet can be used in repeated rolls with
only a few droplets finding their way in.  I have found it very watertight in
heavy surf.  I have used it only in fresh water (cause that's where I live).
When rolling, I think it's adequate down to 50 degree water, but tastes vary
there, and at some point you'll want to insulate body and head if there is any
possibility of immersion.  Check out the Sea Kayaker article on this product
