My first guess would be Van Dusen aka Composite Engineering. They makes
lots of really light boats. Composite Engineering is based in Concord
Massachusetts. http://www.composite-eng.com/kayaks.htm

Struer is another option, they are more into sprint boats, they're
a Danish company.
The struer site is worth a visit if you are interested in boat construction

Kirton is another fast kayak firm. http://www.kirton-kayaks.co.uk

http://www.voyager.co.nz/~delmak/equip.html has a decent list manufacturers
of fast boats and gear
