Ah, what an easy answer to give. Join the Hudson River Watertrail and get the Paddler's Guide that comes with membership. Info is at http://www.hrwa.org and you will note that in the NY Times story on paddling the trail, the write termed the Guide "superb." Where the Guide doesn't cover a particular spot, you can count on finding a food and water source in any town on either side of the Hudson. The east shore of the river is served by the railroad and any of the stations are within a few feet of some restaurant or convenience store. Moreover, nearly all the stations are within a block of a place where you can pull out your kayak.
