Boats do indeed turn better when leaned IF they also lift out the bow and stern from the water.
So one leans flat water canoes to turn and leans white water canoes to paddle straight.

But just a little comment. I've been paddling a Eddyline Raven for about 5 years and just
started paddling a Mayan Seas Performa. I have to remember to lift my right knee turn right
because the kayak turns better with the bottom pointing toward the turn. ( My Raven turned
easiest with the top turning toward the turn so I always lifted the knee opposite the turn)

If free style paddling, we do a axle with the boat leaning toward the turn and a post with the
boat leaning away from the turn. The post is a much snappier turn.

So why is all this?
