Just west of Gainesville, within an hour's drive, there are several places to kayak. I don't know if you'll have a boat with you or not, and I'm not sure about rentals, but the Manatee Springs State Park, the Lower Suwanee National Wildlife Refuge and the Cedar Keys National Wildlife Refuge all provide beautiful scenery.
