Sure, they are a popular option on Betsie Bay kayaks. 

I might recomment 6mm Okoume rather than minicell, since it might be
easier to get a good seal behind the more rigid material.

You can glass a ring of plywood around the normal bulkhead location,
then fit a slightly-undersized loose bulkhead with a rubber gasket--use
bolts or toggles to hold it in place.  Your seat mount will require
some flexibility to give you access to the removable bulkhead.

I'd recommend a front hatch over using a front removable
bulkhead--crawling in my cockpit upside down at every campsite doesn't
sound like fun.

Another word of advice--let your boat get all scratched, and then don't
worry about it?!  Wood boats are tougher than most people realize, and
still plenty beautiful, even if scratched.
