I might recomment 6mm Okoume rather than minicell, since it might be easier to get a good seal behind the more rigid material. You can glass a ring of plywood around the normal bulkhead location, then fit a slightly-undersized loose bulkhead with a rubber gasket--use bolts or toggles to hold it in place. Your seat mount will require some flexibility to give you access to the removable bulkhead.
