Since you're already ACA certified, you can get a disabled paddler's endorsement to it... ACA has had such a program for year; check out their website. There is also a book by Laurie Gullion available through them on the subject. Lots of good ideas. Wilderness Inquiry specializes in taking paraplegics and other handicapped persons on outdoors trips, including kayaking trips. I once ran into one of their kayaking trips in the Apostle Islands, and it looked like everyone was having a blast. I'm sure they would be able to help you.
