Sure you can! I've had my hull planing on many waves, in the wake of
cargoships. While the hullspeed of my kayak is about 9 km/h, I've read a
topspeed of 18 km/h on my GPS on some occasions. Probably I've gone
faster, but every time I made the "surf of my life" I hadn't bother to
turn on the GPS.

I hope this does not lead to another debate on what actually constitutes 
planing. There are somewhat credible reports of baidarkas hitting (or 
possibly exceeding) 10 kts.  That is more than their theoretical hull speed. 
I do not remember whether it was a PW contributor who previously pointed out 
that the standard multiplier of 1.34 used in determining theoretical (!) hull 
speed of ships (naval destroyers) has to be adjusted before applying the 
formula to longer, more slender hull shapes (kayaks, multihulls, etc.).
