In northern Norway last summer we were served an elegant appetizer 
consisting of strips of raw whale (red meat, not muktuk) interlaced in a 
cunning checkerboard pattern with strips of raw halibut, served on a bed 
of iceberg (not that kind) lettuce. Quite nice, and actually better than 
the whale steaks we had the next night, which had a certain liverish 
quality about them. The restaurant was were fresh (?) out of fermented 
walrus flipper.
