For day trip, overnight, or maybe even 3day/2night you might consider

1. Gulf Island National Seashore to Perdido Key
This is south of Pensacola
Primitive camping on Perdido Key Bay side.
Can paddle in Gulf, Pensacola Bay, and Big Lagoon


2. St. Joseph Peninsula 
This is just west of Apalachicola
Picked as one of best beaches in U.S. 7 miles of foot/boat access only
beach with primitive camping.  Start in St. Joseph St. Park

3. Indian Pass to St Vincent Island to Little St George.
Just east of St. Joseph Peninsula.  Neat hiking on St Vincent Island but
must go to Little St. George for camping.  
Can paddle in Gulf and in Apalachicola Bay.
Can extend trip to St. George Island (St George Island State Park)

For multi-day or multi-week trip

1. Ten Thousand Island section of Everglades National Park
Located south of Naples at Everglade City.  
Can paddle open water out to camping on keys or more protected water on
inland waterway, or a loop that includes some of both if you have enough
time.

Sea Kayaking Florida by James Bannon is a good reference source.

I am interested in kayaking that part of Florida. If any of you are planning
weekend trips there and want company, please let me know. I have Mardi Gras
off (that's 2 weeks from now). Some buddies in my hiking club are going
wherever the manatees are, but I want to do coastal waters. I am not going
without a group, though.  I have a teriffic boat, a GREAT paddle, a GPS
unit, and am fun to be with.   Marsanne

A friend of mine bought a kayak company near St. Augustine, Florida (he
grew up in Jacksonville). While it's not on the gulf, he might be a good
reference. I kayaked in some of the marshes and out the inland waterway to
the ocean from where he is located and really had fun. Lots of fast and
expensive boats, however. The rules of the road are quite a bit different!

Bill Jackson's might also be a good resource. It's a big outdoor retail
store who might also know about the gulf paddling.

Sam, I did a week long trip at the end of last February to Citrus
County, just north of Tampa.  I camped at a State Park and did day
trips, some of which involved a small drive to a different put-in.

The Park I camped at is on the Chassahowitzka (spelled wrong, I'm sure)
River.  There's also the Homossassa (also probably spelled wrong) River,
and lots of other smaller rivers.  

The area is a natural wildlife area, has a 40 or 50 mile water trail
with camping chickees along the way, and has about a gazillion little
islands.  The paddle is open or protected, marsh grasses, woods or
"jungle"... take your pick. 

Lots of wildlife to view, and if you go at the right time of year, there
are lots of manatee.  Careful, though.  They didn't seem too bright and
on two occasions they surfaced close enough to run into the kayak and
nearly capsized me. It wasn't aggression - seemed to startle them even
more than it did me.  I saw manatee in all my paddling locations, but
the best viewing is in Kings Bay.

Anyway, I thoroughly enjoyed the trip, and if I go back, will extend the
trip to do a couple other nearby locations that were recommended to me,
but I didn't get a chance to do.

I have lots of details in a trip report, including mileages, web-sites,
fees, addresses, phone numbers, chart numbers, etc. and pictures, if you
have a further interest in that location.  Let me know, and I'll send it
as an attachment (I don't have a web-site).

 The gulf provides so many great paddling places it is hard to make specific
recommendations.

 Southwest Florida is a beautiful place to kayak. There are a lot of
waterways sequestered behind barrier and mangrove islands near Naples,
Venice and Ft. Myers.

 Caya Costa is quite isolated and undeveloped and has good camping.

 I hear that St. George's Island, near Apalachicola, is a good place to
paddle.

  If you are in Florida for a while you may want to check out my backyard
( living on the beautiful and protected spring fed Wekiva in Central
Florida }
