I suggest not trimming gaskets, unless absolutely necessary. I have a size 16 neck and where an XL dry suit. New gaskets are always tight, and stretching is of marginal benefit. What does work well is making sure I keep the gasket pushed as low on my neck as possible. That does away with the choking problem, and the gasket is not uncomfortable when that low.
