Lisa: You are on the right track; preparing for the worst, so you can enjoy the best. My advice would be to talk to experienced kayakers/medicos IN THE REGION YOU PADDLE. I could suggest items from my survival kit here in Australia which would be presumptious of me and inaccurate for you. That said, there are standard first aid items which apply just about anywhere, and standard kit like an emergency blanket, fire-lighting apparatus etc. [but even that sort of gear may have to be upgraded depending on environment]. One thing I found most useful was to carefully list every item when you have finished assembling the stuff - and keep the list inside your survival kit container. Better still, write/print an identical list of contents and secure that to the outside of the container too. Makes it easy to recall in an emergency just what you have. And remember too to REPLACE things like antibiotics, eye medications, burn creams. [Expiry dates could be recorded on a check list ].
