You may want to dehydrate tofu into jerky as a size or weight issue, but many stores carry aseptic packed tofu that does not require water change, or refrigeration (and has a fairly long shelf life). It's packed much like juice boxes. You can cool it down in the water (if you paddle colder waters). It's packed in small bricks and holds up well in this form. Freezing will alter the texture of tofu and make it more 'meat like' to be crumbled into stews, soups, chili. So...dehydrating may well accomplish the same sort of transformation in texture.
