I'd recommend not trying to learn in a poor fitting boat. It might teach you to do things you shouldn't and those, being learned first, will be "burned-in". Better to borrow a good kayak until your new kayak is ready. Once you are proficient at rolling, then experiment with rolling problem kayaks. By then you'll have developed good technique and can apply it to compensate for the difficulties in odd kayaks.
