Although I'm usually the first person to build something from scratch, I'd 
be tempted to head to your local Menards or Home Depot and pick up a pair 
of folding plastic sawhorses - then simply add a padded 'yoke' or saddle 
for the boat.  They fold up flat (approx 2" thick), hold ~150 lbs each, and 
cost about $20 for the pair.  And actually, just a flat padded top for them 
works pretty well - easy to roll the boat on its side.
