One of the trade magazines we get here at work is called 'GPS World' and the Feb. issue has a good article about using GPS to monitor kayak training performance.

Unfortunately, this particular article doesn't appear (as yet) on their website http://www.gpsworld.com/gpsworld/ but here's the teaser that they did post:

Speed Check
Performance Monitoring with RTK GPS
An innovative athletic training method uses a real-time kinematic (RTK) GPS system in inversed mode with mobile base station and fixed rover to measure displacements of a canoe or kayak over time, and thus view canoe or kayak position and velocity with centimeter-level precision, and at a 10 Hz or higher sampling rate. Thus trainers can record an athletes instantaneous speed and compare trajectories between one training exercise and another, something not possible with traditional training methods.

Aside from all the obvious horizontal velocity data that can be collected, I was surprised to see charts and discussion indicating that the boat's change in altitude due to paddle stroke effort can also be observed.

The authors posit that, "... The periodicities [altitude change] are probably caused by the athlete's paddle strokes. Each cycle corresponds to a stroke of the paddle: when the athlete inserts the paddle into the water and pushes it backward, the boat plunges and gains speed, and when the paddle is taken out of the water in order to be brought forward, the boat rises out of the water and loses speed. ..."

The authors work at Laval University in Quebec.
