Ceramic is nice, but difficult to sharpen, somewhat brittle, and generally doesn't have the features you want in a boat knife. I use a blunt-tip, sawtooth, stainless steel Spyderco with a hole for a lanyard. Never rusts, and can cut a plastic kayak in half in a few strokes.
