Rick,

Look for a copy of Mary Bell's Complete Dehydrator Cookbook.  The book
is an excellent resource for dehydration tips and tricks.

Linda Yaffe's books, High Trail Cookery and Backpack Gourmet, have
complete recipies that can be rehydrated with about 15 minutes soak
time.  I have used the ideas in her books as a starting point and
modified my favorite home cooked meals to trail meals.

If you have or can get trays that will hold liquid, pureed soups
dehydate well.
