One quick and dirty way is to scoop a handfull of water into the cockpit while you're sitting in the boat afloat. The direction and speed that the water rolls away will give you a clue to which way the boat is trimmed. The advantage of this method is that it allows for the precence of the paddler,  which has just as much effect on trim as cargo does.
