in the assembled kayak.

I wish such thing existed commercially. I assume you don't mean barges like
Klepper AEII, that can take their Klepper Foldy kayaking cart (it can be
used as a luggage cart, too). For FC Kahuna I had to make a "kayak and
luggage cart" - can be used both as a kayak cart (midwheels), and with added
aluminum poles - as a luggage cart. Essentially, I've been using the
concept by Alex Fergusson from NZ, - only added the poles. Here are some old
photos (it's been modified since then):

There are commercial backpack carts for backpack only - by Feathercraft and
www.paddleboy.com . The former has tiny wheels - even if it's just a
backpack with kayak, and no other gear, these wheels are skinny. Paddleboy
version also works as end-wheels for assembled kayak (not as
middle-wheels), which puts all the stress on your hands, and as I recall
their wheels are still small.
