After a lot of kayak camping I have a few favourites, in no
particular order:

A Hennessy's Hammock is a great aid to sleeping outdoors -
needs to be complemented with a nice Thermarest (or similar).
You'll never sleep better than you do in one of these 
odd contraptions, which packs into a very small volume!

A MSR stove (I've got three!), just in case you can't make a fire!

A big polytarp, and some nice rope, to make a sun shade, wind breaker,
rain roof, et cetera, as needed!

Our toilet seat (a motorbike accident 1990 makes me even less nimble than
I was before, so with a left leg that once was in a few hundred pieces
I am not very good at defecating 'au naturel', so I need support!

A small, four-legged, folding chair with a good backrest is a blessing for a sore back ...
