I've visited Monterey many time (racing at Lagua Seca) and never left without paddling, and I always rented from Monterey Bay Kayaks. They do offer a selection of boats and have wet suits. I've paddled both from the location next to the marina as well as Elkhorn Slough, and they are both grand. The first gives you access to the kelp beds where you can watch the sea otters feast (just paddle into the kelp and sit still and watch.) The second provides a nice flatwater paddle up into the slough where we saw lots of wildlife on our foggy drizzly day. From here I paddled a really nice performance kayak, but I forget exactly what it was. Both are good fun, and if you have time I would do them both. Have a great time!
