I use a racing surfski, a sit on top. 19.5 feet long. Learning curve starts out slow, but you can get so that nearly any bad weather can be fun, and your friends with touring boats will never be able to keep up with you if you race them. And the most important reason, for the surfski, to me, was that I can easily get off, and then back in, making freediving on it around 2 miles out, very feasible.
