Heritage, formerly hop-on-top, makes 'glass sit on tops with hatches.  
The 18' model has a beam of about 20 inches.  The optional thigh straps 
are great.  I've only demoed the boats and I had a great time demoing 
them, they would stay on edge quite nicely.  The rep/builder that I talked
to had a carbon fiber one that weighed something like 35 pounds.
During the demo day I found I prefered the 18' heritage to a Necky 
Looksha IV, but that preference may be bogus because they didn't have
a sprayskirt for the Necky.  

For sleek sit on tops there are always surf skis ;-)
Futura, Venture Sport, Tsunami, Twogood are some of the US manufacturers for
surf skis.
