Maurice's in Columbia is good, and NC stuff will do if you cain't find any
better, but you gotta (like folks from all over the South do) go to
Carolina BBQ in New Ellenton, SC, or Sweats in Soperton, GA.  Ain't no
better nowhere.

Proper use for a paddle is to stir the gumbo pot in LA, the "bile"
(Frogmore Stew or Lowcountry Boil) in South Carolina.  You just need a
sharp stick for a BBQ.
