I'd like to second Jeff's recommendation of Maine Island Kayak Company on 
Peak's Island Maine. They are wonderful people, superb instructors. 

Also consider Atlantic Kayak Tours in Peekskill NY, which is sponsoring an 
excellent skills symposium this coming July. See the website at 
kayaksymposium_at_aol.com .

For ACA, consider H2Outfitters on Orr's Island Maine. I know that some people 
have had bad luck with their tours, but they do have some first-rate 
instructors. My personal experience with their skills sessions has been 
excellent.
