Actually Feathercrafts are easy enough to roll.  I know that Ken Fink
teaches people rolling using the K-Light.  I have seen a fellow learn to
roll with one in pool sessions in Philadelphia.

Rolling a folding kayak requires conquering some inertia.  You have to
let them go slowly through the process rather than rush them.  I have
also seen a double Klepper rolled at the Downtown Boathouse.

So it can be done.  For the most part though it is a circus act, i.e.
something to perform rather than rely on as a self-rescue technique in a
pinch.  I doubt that that double Klepper could be rolled in combat
situations.  The single Feathercrafts may however be particularly the
Khatsalano and the K-1.

I have been rolling hardshells but not yet tried doing so with my
K-Light .  Maybe I give it a try now that the waters have warmed up. 
Trouble is that there is no incentive.  Folding kayaks don't tip easily
and the odds of needing to roll one are quite low as just staying
centered in your boat will see you through lots of adverse conditions
that might dump a paddler in a sleeker boat.
